Brunch Casserole

12 slices extra-thin white bread
Butter, softened
1 pound pork sausage
½ pound (2 cups) grated Swiss cheese
4 eggs
3 cups milk
1 teaspoon salt
Tabasco to taste

Trim crusts from bread and butter lightly on 1 side. Crumble sausage and cook until lightly browned; drain. Lay out 6 slices bread in a 3-quart casserole, buttered side up. Sprinkle half the sausage and half the cheese over bread. Repeat with bread, sausage and cheese. Beat together eggs and milk until well-blended; beat in salt and Tabasco. Pour over sausage and cheese. Press down on bread until milk comes through. Cover with plastic wrap and refrigerate overnight. Bake at 350 degrees for 1 hour, until puffed and brown. Serves 6. (It takes about 30 minutes if using a 9 x 9 square pan.) This recipe is always a big hit.
