Mother's Coconut Cake

(She would always make this cake especially for me at Christmas time because she knew that it was my favorite, especially with the whipped cream icing.)

2 cups sugar

4 eggs

2 cups flour

1/4 pound butter

1 cup milk

1 teaspoon vanilla

2 teaspoon baking powder

Cream sugar and eggs. Heat milk and butter together. Alternate flour and liquid in adding. Add vanilla. Then last add baking powder.


Boil part of coconut milk with 1/2 cup sugar. Moisten baked layers with this mixture.


Whipped Cream Icing

1/2 pint whipping cream, whipped

2 tablespoons sugar

1 teaspoon vanilla


Cooked Icing

1 1/2 cups sugar

2/3 cup water

3 egg whites.

Cook sugar and water until it spins a thread. Beat egg whites stiff, and pour in slowly the hot sugar and water mixture. Beat until stiff and cool.
