This recipe goes back in my family as far as I can remember. Even my dad could not remember a time when this recipe wasn't in the family. My mother always fixed these cookies at Christmas time and they were always my favorite.

1 stick butter
½ c. white sugar
½ c. brown sugar
1 whole egg
½ tsp. vanilla
2 c. flour
¼ tsp. soda
1/8 tsp. salt

1 (6 ½ oz.) pkg. dates, chopped
¼ c. sugar
1/8 tsp. salt
1/3 c. water
Nuts (optional)
Little lemon juice (optional)

Batter: Cream butter and sugars. Add egg and vanilla. Add flour, soda and salt. Refrigerate dough several hours.

Filling: Boil and simmer all ingredients for 5 minutes on top of the stove. Cool before spreading on the cookie dough.

Roll out the cookie batter on a floured board to ¼ inch thickness. Spread filling on top. Then roll it up. Slice the roll into about 1 foot sections and freeze each section separately. When ready to cook, take a section out of the freezer and slice into ¼ inch pieces. Bake the pinwheel cookies at 375 degrees for about 10 minutes.
