1 large egg or 2 egg yolks
1 c. butter
1 c. sugar
½ tsp. soda
1 tsp. vanilla
2 ½ to 3 c. flour
½ tsp. salt
1 box confectioner’s sugar
1 stick margarine
1 tsp. vanilla
1 tsp. milk (if needed)
Cream butter and sugar until light and fluffy. Add egg and mix well. Add flour, soda and salt that have been sifted together. Add vanilla and blend thoroughly. Refrigerate dough several hours or overnight. Remove chilled dough in small portions and roll to ¼ inch thickness on floured board. Note: I use an old cloth tablecloth which I spread the flour on. Cut in shapes.

Bake in 350 degree oven until very lightly brown at the very bottom edge of the cookies. Although the time varies, it takes about 10-12 minutes.

Mix icing and spread on cookies. (The cookies are also good without the icing, and great for dunking in coffee.)
